ALL YOU NEED : for this instant jar of flavour and personality is a sharp knife and heatproof jar with lid. Olive oil, bulb of roasted garlic, chilli flakes and fresh / dried herbs.
PROCESS : Pour about 250 ml oil (I use olive) into a heatproof jar, add a sprinkling of chilli flakes (fresh if you like) and your choice of herbs.

What Goes With What :
Thyme, Tarragon, Coriander : Chicken and great in soups
Mint, Rosemary : Lamb
Sage, Fennel : Pork
Parsley, Chives, Coriander : Fish / Seafood
Watercress : Fish, Pork, Chicken
Oregano, Thyme, Bay Leaves : Beef
Place in microwave on high for 1 min, or until hot (not boiling). Carefully remove, squeeze roasted garlic into jar. Allow to cool completely before popping the lid on, but you can use it while it’s still warm.
