Savoury Spice Mash Up

Take any 3-4 boxes of spices, pour into a jar, give it a shake and use to flavour meatballs, hamburgers, curry’s. Great as a dry rub for chicken, steak or sprinkle over fish before grilling, potatoes before roasting, veggies when steaming. See below for suggested spice combinations (fish, seafood, lamb, beef, venison), also Mexican (for Nacho’s, Taco’s etc), Masala, Jamaican, Korean and Moroccan.

All you need: You, a jar and 3 half used packets of spice or herbs.

Process: Head to your pantry. Pick 3 random half boxes of spices (2 spices & one box of dried herbs is always a good combination). Pour into the jar, pop the lid on and give it a shake. Use 1 tbsp spice mix to 500 g meat.

Jax Says : Lighten up your pantry and give the following ‘mash up’ combo’s a go, using either 1/2 box for each or equal measures, i.e. 1 tbsp  :

MEXICAN : NACHO/BURRITO/TACO: 
Cumin, ground
Coriander, ground
Thyme, dried
Black Pepper, ground
Smoked / Regular Paprika
Garlic Powder
Pinch of Cocoa Powder

USE THIS MASH UP IN  : My Buffalo Chicken Loaded Kumara Fries

JAMAICAN:
Allspice, ground
Thyme, dried
Lemon / black pepper
Garlic salt
Chilli flakes (if you like it hot 1/2 box)
Cinnamon, ground
Nutmeg, ground

Use as a dry rub, for chicken, pork, fish OR add 2 tbsp to finely chopped spring onions and a couple tbsp sesame oil and use as a marinade for BBQ or grilling fish, meat, veggies.

KOREAN BBQ
Ginger, ground
Sesame Seeds
Chilli flakes, dried (cayenne)
Black pepper, ground
1 tbsp sugar (brown is lovely)

MOROCCAN:
1/2 box paprika (smoked if you like)
1/2 box ground cumin
1/2 box ground coriander
1/4 box cinnamon
1/4 box nutmeg
1/4 box turmeric
1/4 box mixed herbs

Use as a dry rub for meat / fish.  Sprinkle through cous cous and add raisins, chopped nuts.  Sprinkle over rice when serving or yogurt for a marinade with a squeeze of lemon juice.

MASALA:
1/2 box garam masala
1/2 box turmeric, ground
1/2 box ground coriander
1/4 box ground cumin
1/4 box chilli flakes (optional)
1/2 box garlic salt

1 tbsp of this mix to 500g meat / fish / seafood as a marinade or use to amp up the flavour when starting a curry with onions + 1 tbsp masala mix to pan + 1 garlic clove, crushed + 1 tsp fresh ginger (grated)

Recipe : Prawn and Spinach Masala

CHICKEN:
1/2 box garlic powder
1/2 box smoked paprika
1/2 box dried thyme
1/2 box lemon pepper

FISH & SEAFOOD (1 tbsp 500g fish or 2 your tastes)
1/2 box lemon pepper
1/2 box tarragon
2 tbsp smoked paprika
1/2 box parsley

PORK 
1/2 box turmeric, ground
1/4 box black pepper
1/4 box paprika
1/4 box fennel seeds
1 tsp chilli flakes

Mix 1 tbsp with 1 crushed garlic clove, 2 tbsp olive oil, juice 1/2 lemon (add 100g yogurt if you like) cover fish and marinate for a minimum of 30 minutes.  BBQ, fry, roast, grill or steam. Divine

LAMB (1 tbsp spice to 500g meat)
1/2 box coriander, ground
1/2 box cumin, ground
1/4 box rosemary, dried (or mixed herbs)
1/4 box chilli flakes (or as much / little as you like)
1/4 box sumac (*optional if you have it)

Use as a dry rub or mix 1 tbsp spice with 2 chopped anchovies, rub into meat and marinate. Flavour sensation.

BEEF / VENISON (1 tbsp spice to 500g meat)
1/2 box fennel seeds
1/2 box dried thyme (or mixed herbs)
1/4 box allspice, ground
1/4 box pink peppercorns
*1 tbsp coffee, fine ground (*optional – if you’re game)

Use as a dry rub with 1 clove garlic, crushed and a sprinkle of oil.  Don’t forget to season
