Garlic and Herb Butter

This Hax is an incredible way to add instant flavour to the pan.  The blend of crushed garlic, herbs and chilli (if you like) is the perfect enhancer to so many dishes. Make a jar once a fortnight, leave in the fridge to pick up when prepping. Use to pan fry fish, meat, start a curry or risotto. Fabulous when roasting meat, scrambling eggs, mashed spuds, stir-fried veges – the lot.

Also melt and drizzle over potatoes, kumara or swede for the perfect oven roasted, crispy chips.

Recipe & Information

All you need : Knife, chopping board, hand blender or food processor, jar.

Process: Scrape soft butter into a bowl (refer to our Melting Butter hax for melting help!). Add garlic, chilli, herbs, salt and pepper. Pulse or mash with a spoon until combined. Place in a jar and pop in the fridge and use often.

For Garlic & Herb Chips : Preheat oven to 180. Melt 150g butter, scatter your cut chips (potato, kumara or swede) on an oven tray (in one layer) drizzle with the butter.  Pop in the oven, roast for 20 minutes, flip them over then remove when golden and crispy – divine.
