All you need: Tomatoes, sharp knife, chopping board, frying pan with lid, olive oil.
Process: Slice your tomatoes through the belly button. Place your frying pan over a medium heat, drizzle in the olive oil. When warm (not hot – we are steaming these tomatoes), place the tomatoes, cut side down in the warm oil. Replace the lid and leave for 5 minutes. Remove the lid and pinch the skins off. If they are still a little tight, replace the lid and try again. The skins should peel off very easily.
